If you love enchiladas but don’t love the time it takes to roll them one by one, this Gluten-Free Enchilada Bake is about to become your new weeknight hero. It’s got everything you crave—cheesy goodness, bold enchilada flavor, and comforting layers—all baked up in one easy dish.

Made with naturally gluten-free corn tortillas, seasoned hamburger meat, your favorite enchilada sauce, and a generous helping of cheese, this dish is a hit with the whole family. It’s basically enchiladas meets lasagna, and yes—it’s as delicious as it sounds.


🌮 Ingredients

  • 1 lb ground beef
  • 1/2 onion, diced
  • 1–2 tsp taco seasoning (make sure it’s gluten-free)
  • 1 (10 oz) can red enchilada sauce (or more if you like it extra saucy)
  • 12 small corn tortillas
  • 2 cups shredded cheese (Mexican blend or cheddar)
  • Optional Toppings:
    Sour cream, green onions, jalapeños, chopped cilantro

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the beef
    In a skillet over medium heat, cook ground beef with diced onion. Drain excess grease. Add taco seasoning and a few spoonfuls of enchilada sauce to coat the meat. Let simmer for 2–3 minutes.
  3. Layer like lasagna
    In a 9×13” baking dish, spread a thin layer of enchilada sauce on the bottom. Then layer:
    • 4 corn tortillas (tearing as needed to cover)
    • Half of the seasoned meat
    • 1/3 of the cheese
    • A drizzle of enchilada sauce
      Repeat this layer one more time.
  4. Top it off
    Finish with the last 4 tortillas, the remaining sauce, and the rest of the cheese.
  5. Bake
    Cover with foil and bake for 20 minutes. Uncover and bake for an additional 10 minutes, or until cheese is bubbly and melted.
  6. Cool & serve
    Let sit for 5–10 minutes before slicing. Top with your favorite extras!
