- 1 box gluten-free pasta (elbow, rotini, penne – whatever you love)
- 1 lb ground beef
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper, to taste
- 2 cups cottage cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan (optional but yum)
- 1 jar gluten-free marinara or pasta sauce (24 oz)

- Boil your gluten-free pasta according to the package directions until just al dente. Drain and set aside.

- In a skillet, brown the ground beef. Season with garlic powder, onion powder, salt, and pepper. Drain excess grease if needed.

- In a large mixing bowl (or the pan like I did), combine the cooked pasta, cooked beef, cottage cheese, half of the mozzarella, all of the marinara sauce, and Parmesan (if using). Mix until everything is coated and evenly combined.

- Pour the mixture into a greased 9×13 baking dish. Sprinkle the remaining mozzarella cheese over the top.
- Bake at 375°F (190°C) for 30–35 minutes, until bubbly and heated through.
- For a golden cheesy crust, broil the top for the last 2–3 minutes (keep an eye on it!).
- Let it cool for 10 minutes before serving so it sets a little—then dig in and enjoy!
