🍽️ Easy Gluten-Free Lasagna Bake (No Fuss, Just Flavor)

If you’ve ever craved lasagna but noped out at the thought of building all those layers—this one’s for you. This no-layer lasagna bake has all the flavor and cozy vibes of the traditional dish but skips straight to the good part: tossing everything together and letting the oven do the work.

Made with gluten-free pasta, seasoned ground beef, cottage cheese, and loads of melty mozzarella, this is a one-dish dinner your whole crew will love (even if they don’t have to eat gluten-free).

(Serves 6–8)

  • 1 box gluten-free pasta (elbow, rotini, penne – whatever you love)
  • 1 lb ground beef
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt & pepper, to taste
  • 2 cups cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan (optional but yum)
  • 1 jar gluten-free marinara or pasta sauce (24 oz)

👩‍🍳 Instructions

  • Boil your gluten-free pasta according to the package directions until just al dente. Drain and set aside.
  • In a skillet, brown the ground beef. Season with garlic powder, onion powder, salt, and pepper. Drain excess grease if needed.
  • In a large mixing bowl (or the pan like I did), combine the cooked pasta, cooked beef, cottage cheese, half of the mozzarella, all of the marinara sauce, and Parmesan (if using). Mix until everything is coated and evenly combined.
  • Pour the mixture into a greased 9×13 baking dish. Sprinkle the remaining mozzarella cheese over the top.
  • Bake at 375°F (190°C) for 30–35 minutes, until bubbly and heated through.
  • For a golden cheesy crust, broil the top for the last 2–3 minutes (keep an eye on it!).
  • Let it cool for 10 minutes before serving so it sets a little—then dig in and enjoy!
